Melinda came to pick up her order yesterday. Chocolate soufflé cupcakes made with Valrhona topped with coffee buttercream and pistachio macaroons.
This cake is flourless giving it a melt-in-your-mouth texture. The richness of the dark chocolate is complimented with silken French buttercream which leaves bursts of coffee in your mouth. I like simplicity in my cupcakes. It's safe to believe that with good ingredients, anything works.
Pistachios are naturally stickier and more buttery than almonds. As a result, these macaroons almost always seem slightly denser in texture but much nuttier in flavor.
